Healthy eating and - living is really important for our overall happiness in life.  But this does not mean we will have to do without the joys of wonderful desserts.  I admit, I would not want to live without yummy desserts... but then again, I do think about what is in my dessert - is it good for me or not.

I would like to share with You a few Guilt-Free Dessert Recipes that taste absolutely wonderful... so, You can enjoy all the pleasures of a yummy dessert and feel good  and healthy afterwards!  All I prepare is really, really simple, so, if I can do it, You can too.  

Guilt-Free Cake

You will need:

6 Free-range or Omega-3 eggs
6 Tablespoonfuls of finely ground unrefined, wholemeal flour
8 Tablespoonfuls of unrefined organic sugar (unrefined sugar has no crystals, it is smooth and lovely). If You are going to use ordinary sugar or partly refined sugar, use 6 tablespoonfuls
600 g of dried apricots
Green tea

Brew a cup of strong green tea. Cut the apricots into small pieces and let them sit in the green tea for about an hour. Preheat the oven to 180 degrees of Celsius or 356 degrees of Fahrenheit. Whip the egg whites. Whip the egg yolks and the sugar. Gradually add the flour to the egg yolks and sugar. Finally mix all the ingredients together, but do not whip. Stir gently with a wooden spoon. Pour the mixture into a cake pan and put into the oven. Bake the cake for about 35 minutes. Do check whether it is completely ready before removing from the oven.

This cake is wonderful when served hot. You can serve it with whipped cream... like my mom likes it. She sure adds more sweet stuff whenever she can.

Sweet Snowball Soup

I prepare the Snowball Soup for my dad every single Father's Day for it is his absolute favorite dessert. My grandmother used to make it for my dad when he was just a little boy and he has continued to enjoy this sweet soup as his favorite dessert all those years. It really looks like a snowball soup... and it tastes absolutely wonderful... and it does not have loads of calories.  It is also very simple to prepare.

You will need:

1 Liter of milk (organic if possible)
4 omega-3 eggs
1/2 cup of organic sugar... if it is completely unrefined, You will need 1 cup of sugar
1 teaspoonful of potato flour (potato starch)
vanilla

Whip the 4 egg whites, adding 2 tablespoonfuls of organic sugar. Whip until hard. Whip separately the egg yolks, the rest of the sugar and potato flour. Warm (to almost boil) the milk in a large pot. Start taking with a tablespoon from the whipped egg whites "snowballs" and putting them into the hot milk. Let them warm in the milk for about 5-10 seconds on both sides, then lift them with a skimmer on a tray. Continue until all the "snowballs" have been heated in the hot milk. Then add the egg yolks into the milk and heat. Stir continuously until the milk and eggs have thickened. Do not boil. Remove the pot from the stove and let it all cool down. Serve the sweet dish in a large bowl, letting the snowballs float on the top. It is an especially lovely dessert during a hot day.
